Aloo Bhindi Masala (Potato Okra Fry)

I would like to start the posts with my two favorite veggies...Potato and Okra

Ingredients:
1. Potatoes                                         1/2 kg
2. Okra                                              1/2 kg
3. Tomatoes                                        2
4. Onions                                            3
5. Red chilli powder                            1 tsp
6. Salt                                                 as needed
7. Oil                                                  few tsp

For seasoning:
1. Mustard seeds                                 1/2 tsp
2. Curry leaves                                     Few
3. Cumin seeds                                    1/2 tsp
4. Oil                                                   2tsp
5. Onion                                              1 small

 
































Procedure:
1. Peel potatoes and cut into cubes.
2. Cut okra 1" long.
3. Heat oil in a pan and fry both separately.
4. In a separate pan heat oil and season.
5. Add chopped onions and saute till golden brown.
6. Add chopped tomatoes, simmer till oil appears on the sides(10 min approx.)
7. Add fried potatoes and okra.
8. Add chilli powder and salt.
9. Mix well and serve hot with chapathi or rice and dal.
